Aunt Ruby's Butter Tarts

The last time I saw my Aunt Ruby 
(My Dad's Sister) was in the 70's, 
I was treated to these delicious Butter Tarts.
I am thankful to have her recipe.
Making them brings back fond memories
of this wonderful Aunt and a
beautiful lady. 


Tart Filling:...(makes 1 doz. tarts).

1 cup brown sugar
2 eggs
1 tsp. vanilla
1 tablespoon vinegar
1 tablespoon melted butter.
1/2 cup currants.

mix all together and put in uncooked pastry tart shells.
(I use an ice cream scoop to fill the shells.)
Bake 450 deg. - 8 mins, then
          350 deg. 15-20 mins.

enjoy...

You may substitute the currants for raisins, pecans or walnuts.
Delicious!!

I use unbaked tart shells.
Sometimes, I make my own pie crust recipe.
Organic Vanilla, Ordinary vanilla can be used also.

and The currants come from Maxi Store.
